Salmon Deviled Eggs With Home-made Mayonnaise

Bored of the traditional deviled eggs? Try this simple recipe and relish the taste and goodness of salmon deviled eggs with home-made mayonnaise.

Ingredients:
  • Egg yolks- 2
  • Garlic- 1 clove (pressed)
  • Vegetable oil- ½ cup
  • Salt- 1 pinch
  • Pepper to taste
  • Red wine vinegar- 2 tablespoons
  • Eggs- 12
  • Shallot- 1 (minced)
  • Canned salmon- 1 can (150 gms), drained and flaked

Preparation:
  • To make mayonnaise, beat the egg yolks in a medium bowl with an electric mixer or hand blender. Slowly add the oil, add one tablespoon at a time, while mixing continuously. Continue to add oil until the mayonnaise is slightly thicker than regular mayonnaise.
  • Pierce the garlic clove, and stir it in the mixture until it releases its juice. Remove the garlic and season with salt and pepper. Bled in the red wine vinegar, 1 teaspoon at a time.
  • Place the eggs in a large bowl with enough water to cover the eggs. Bring to a boil, then simmer for 8-10 minutes. Remove from heat, drain, and cool. Peel off the shells, and cut eggs in half- lengthwise. Remove the yolks, and place them into a medium bowl. Place the egg whites on a serving plate.
  • To the yolks, add the shallots, salmon, 1/2 cup of mayonnaise, salt, and pepper. Mix until they are properly blended. If the mixture appears dry, add more mayonnaise. Spoon into the egg white halves, chill, and serve.
